Description:
The name is that of the daughter of the historic cyclist Fausto Coppi, but the one who set up this young winery is Marina’s son: Francesco Bellocchio, who, with his wife, decided to go back to the roots of his land, in the Colli Tortonesi. In love with the fascinating Timorasso, Francesco selected the best soils for this grape variety. The terroir of clayey marls veined with sandstone formations “Marne di Sant’Agata”, characteristic of the Barolo area, is accompanied by the continental climate, with a marked temperature range and low rainfall, and the influence of the sea air, which contribute to create elegance and finesse.
Fausto is a wine of character and great personality, expression of the land, it is dedicated to Francesco’s grandfather. It is made from Timorasso grapes and highlights the natural qualities of this rare variety.
The grapes come from the vineyards of “Gabetto” and “Montagnina”. The latter is planted with a slope
slope of almost 35%.
The pedological characteristics of this cru, rich in calcareous marl, give the wines elegance, flavor and structure.
Tasting Notes and Pairing:
Complex and intense, the wine immediately shows minerality and white flowers to finish on citrus and pink grapefruit notes.
Important structure, excellent flavor, warmth and freshness, elements that give great balance, and a persistent finish.
To be paired with risotto whipped with cheese or white truffle, white meat, shellfish and structured fish dishes. Excellent with cod.

Production method and aging:
Soft pressing of whole grapes and cold pressing of the must; alcoholic fermentation takes place slowly at a temperature of about 15°C. Once fermentation is complete, the wine is racked off the skins and does not undergo malolactic fermentation.
The wine matures for about 10 months on its noble lees, in temperature controlled stainless steel tanks, and is enriched with aromas and structure thanks to the manual bâtonnage. Bottled in July, the wine is further refined for a minimum period of 10 months.
