Description:
The production area is the municipality of Barolo – single vineyard Cannubi. 2017 vintage.
The age of vines: 30 to 50 years old.
The vineyard exposure: South, South – East.
The soil type is calcareous with 45% sand, 35% limestone, 20% clay. we can certainly remember this year as one of the earliest in recent years, about two weeks earlier than the norm. Wines with great prospects.
Tasting Notes and Pairing:
Garnet ruby red with orange reflections. The Bouquet is ample and embracing, with pronounced fruity notes of cherry and plum and notes of tobacco, liquorice and cocoa
the Taste is harmonious, pleasantly dry with soft tannins, broad and full-bodied. Persistent finish. It goes perfectly with traditional egg pasta from Langhe, tajarin, meat ravioli, red meat dishes, boiled meats, braised meats and game. It’s ideal with sheep and goat tomes and aged cheeses.
Suggested serving temperature:
16-18 °C
I recommend opening 1-2 hours before the service. Suggested serving temperature: 16/17°C.
in the vineyard:
The vineyards are managed in a conventional but reasoned way, progressively carrying out different phases of approach to organic management.
Production method and aging:
fermentation in thermo-conditioned steel tanks a controlled temperature for 20 days. Aging in large lightly toasted barrels.
